摘要

基于课程思政理念,梳理高职烹饪工艺与营养专业思政元素,探讨中式面点工艺课程思政教学改革的实现路径.以黄冈职业技术学院课程思政示范课程中式面点工艺为例,通过整合教学模块,优化课程内容,建设在线课程,线上线下交互学习,制定多元考核体系,实现课堂全过程管理和有效评价,达到人才培养、教学成果培育、教学资源建设等多维度的教学成效.将"立德树人"贯穿教学始终,以期为烹饪工艺与营养专业教学改革以及餐饮类高素质技术技能人才培养起到启示作用.

Abstract

Based on the concept of ideological and political education in the curriculum,this paper sorts out the ideological and political elements of culinary technology and nutrition majors in higher vocational colleges,and explores the implementation paths of ideological and political education reform in Chinese pastry technology courses.Taking the demonstration course of ideological and political education in Huanggang Polytechnic College as an example,this study aims to integrate teaching modules,optimize course content,establish online courses,engage in online and offline interactive learning,and develop a diversified assessment system to achieve full process management and effective evaluation in the classroom,achieving multi-dimensional teaching effects such as talent cultivation,teaching achievement cultivation,and teaching resource construction.Integrating the concept of Strengthening Morality throughout teaching,with the aim of providing inspiration for the reform of culinary arts and nutrition education and the cultivation of high-quality technical and skilled personnel in the catering industry.
