A Study of Cheese Food Culture in the Song Dynasties from the Perspective of the Exchanges of Chinese Nationalities
The cheese culture of the Song Dynasties was rooted in the historical period of cultural exchanges between the South and the North.As a Central Plains dynasty against the Liao,Jin and Western Xia Dynasties,there was no fertile pasture to provide milk source for making cheese,let alone a strong heritage of cheese diet.However,during the Song Dynasties,from the common people to the royal nobility,from the cheese shops on the streets to the royal cheese workshop,there developed a large scale and highly skilled cheese food culture.This paper discusses the historical evolution of cheese in China,the development of cheese culture from the perspective of ethnic communication in Song Dynasties,the urban cheese culture and the royal cheese culture in the Song Dynasties,and analyses the formation and development path of cheese food culture in the Song Dynasties in the historical context.
