Mechanism of acrylamide-induced neurotoxicity: a review of recent studies
Acrylamide (ACR) is widely used in working and living environments.The related studies have confirmed the neurotoxicity induced by acrylamide in human being and animals.The typical manifestations are acragnosis,ataxia and weakens or disappears of achilles tendon reflex.In recent years,the mechanisms of neurotoxicity induced by acrylamide,such as abnormal changes of cytoskeletal proteins,oxidative stress,abnormality of the energy metabolism and axonopathy of nerveterminal,but the specific mechanism is still unknown.In this paper,the physico-chemical properties,metabolism,typical manifestations,pathological features and mechanisms were reviewed.
