杂豆中酚类物质的组成、生物活性及其应用研究进展

杂豆分布广、种类多,是人们日常膳食的重要组成部分.酚类物质是杂豆中重要的次级代谢产物,具有多种生物活性.近年来,关于杂豆酚类物质的研究热度持续增长.文章对杂豆种子酚类物质的含量组成、生物活性和应用方面的研究进行了梳理,以期为其深入研究与综合利用提供参考.
Research Progress on the Compositions,Bioactivities and Applications of Phenols in Beans
The beans with wide distribution and numerous varieties were important in human daily diet.Phenolic compounds were important secondary metabolites in miscellaneous beans and had many biological activities.In recent years,more and more scientific researches had focused on the phenolic compounds in bean seeds.In this paper,the contents compositions,biological activities and applications of phenolic compounds in bean were combed and sorted,which could provide a reference for their further research and comprehensive utilization.
