Process Optimization of Low-temperature Plasma-Induced Germination Enrichment of γ-Aminobutyric Acid in Adzuki Beans and Changes in Related Enzyme Activities
In order to study the effect of plasma treatment on the germination and enrichment of adzuki bean seeds,adzuki beans were used as raw materials,atmospheric pressure cold plasma treatment and cultivation of adzuki beans under constant temperature and humidity conditions.On the basis of single factors,the GABA process of adzuki bean germination and enrichment was optimized by Design-Expert 13 software,and the activity of GABA synthesis in the germination stage was studied,using plasma time,plasma voltage,plasma frequency and germination time as response factors,and GABA content as the response value.The results showed that the optimal process of plasma stress adzuki bean germination and enrichment process was as follows:plasma time 30 min,plasma voltage 90 kV,plasma frequency 130 Hz,germination time 60 h,and the highest GABA content under this condition was 114.45±1.08 mg·100 g-1.In addition,it was found that the GAD enzyme activity of plasma-treated adzuki beans at the germination stage was higher than that of normal adzuki beans,while the overall AMADH enzyme activity was lower than that of normal adzuki beans.
