Chitosan has good effect on the preservation of fruits and vegetables.Chitosan as the main component is prepared as a preservative,which is used in the form of coating for the preservation of fruits and vegetables.The concentration of chitosan is 2.5%,and the pH of the preservative is 5.5.The study conducts sodium dehydroacetate as the anti-mold agent,obtains a chitosan mixed with environmental protection fruit and vegetable preservative for the preservation of horn pepper.The rot rate is reduced to 18.83%,which can effectively reduce the low rot index of horn pepper,obviously control the after-cooking,inhibit the respiration and slow down the loss of VC and sugar.
