Research Progress on Composition and Influencing Factors of Sunflower Seed Oil
Sunflower is an important oil crops and cash crops in the world,the oil made of sunflower seeds is rich in unsaturated fatty acids and has a variety of bioactive components,which is a kind of healthy vegetable oil and favored by consumer.The nutrition contents and flavor of the edible oil are two key factors in determining consumers'purchase intention.In this paper,the research progress of nutrient and flavor components and their influencing factors in sunflower seed oil was systematically summarized,focusing on the classification,application fields,processing technology,storage and preservation technology of sunflower seed oil.And provide prospects and research directions for the development and utilization of sunflower seed oil.
