Research Progress on the Application of Pulsed Light in Preservation and Processing of Fresh-cut Fruits and Vegetables
Due to the advantages of rich nutrition,convenience and freshness,fresh-cut fruits and vegetables are deeply favored by consumers.However they are easily contaminated by microorganisms during the processing and storage,which depreciates their quality and shelf-life.Pulsed light as a nonthermal sterilization technology possesses the merits of high efficiency,energy-save,environment-friendly and residual-free.This article briefly introduces the disinfection mechanisms and characteristics of pulsed light,meanwhile,the newly progress on the application of pulsed light in preservation and microorganisms control of fresh-cut fruits and vegetables is particularly recommended.
