Comparative Analysis of the Nutrient Composition of the Longest Muscle of the Bovine Back in Different Regions of the World
To explore the differences in the nutrient contents of amino acids,fatty acids,trace elements and other nutrients in the longest muscle of bovine back in different regions.The longest muscle of 6 bulls around 36 months old from Guizhou,Inner Mongolia and Xinjiang,were selected for nutrient content determination.The re-sults showed that:(1)the contents of glycine,proline and alanine in the longest muscle of bovine back in Inner Mongolia region were significantly higher than those in Guizhou and Xinjiang regions(P<0.05);(2)the contents of stearic acid and oleic acid in the longest muscle of bovine back in the Inner Mongolia region were extremely sig-nificantly higher than those in Guizhou and Xinjiang regions(P<0.01);(3)the content of taurine in the longest muscle of bovine back in Guizhou region was significantly higher than that in the Inner Mongolia and Xinjiang re-gions(P<0.05);(4)the content of total cholesterol in the longest muscle of bovine back in the Xinjiang region was extremely significantly lower than that in Guizhou and Inner Mongolia regions(P<0.01).In summary,the content of amino acids and fatty acids was high in Inner Mongolia region,the content of taurine was high in Guizhou region and the content of cholesterol was low in Xinjiang region.
