摘要

徽州婺源地区的排日账是一种极具特色的民间文献.婺源塾师朱鲁瞻的账本《量入为出》记载了从宣统元年到民国二年朱家的家庭日常收入支出和社会活动情况,包括因地制宜的日常饮食、丰俭有度的时节饮食、饱含寓意的婚丧祭祀饮食等方面的内容.清末民初时,婺源的饮食生活稳定不变、饮食观念转变缓慢、饮食消费保持传统模式,甚少受到西方饮食的影响,为研究这一时期长江流域饮食文化提供了样本.

Abstract

The Pairizhang(account of everyday activities)of Huizhou Wuyuan area is a distinctive folk literature.The account book Make Ends Meet of Zhu Luzhan,a school teacher in Wuyuan,record-ed the daily income,expenditure and social activities of Zhu's family from the first year of Xuantong to the second year of the Republic of China,including the daily food in line with the local conditions,the dietary habit moderated in either frugal or abundant season,the meaningful wedding and funeral sac-rificial food,etc.It can be seen that in the midst of the great changes of the end of the Qing Dynasty and early Republic of China,the dietetic life in Wuyuan remained stable,the attitudes towards their di-etary was not transformed yet,and dietary consumption kept a traditional way,even with little influence from Western diet.This provides a sample for the study of the dietary culture in the Yangtze River Ba-sin during this period.
