Changes of microscopic characteristics during the processing and drying process of Lycium barbarum fruit
OBJECTIVE To study the changes of microscopic characteristics of Lycium barbarum fruit under different treatment processes.METHODS In this study,fluorescence microscope,stereomicroscopy and scanning electron microscope were used to observe the change of microstructure from L.barbarum fruit between before and after treatment.RESULTS Edible alkali treatment could cause the surface wax layer of L.barbarum fruit to dissolve,thin,or partially disappear(not reported in literature as wax layer aggregation or cracking phenomenon),leading to an increase in epidermal permeability and thus increasing the drying rate.The membrane structure of L.barbarum fruit was disintegrated and destroyed,and cytochrome was released uniformly into the cells after sulfur fumigation.Different processing methods had significant effects on the microstructure of L.barbarum fruit.CONCLUSION This study can provide an important reference value for the improvement of processing and drying methods of L.barbarum fruit and the identification of processing methods of L.barbarum fruit.
