Evaluation of Nutritional Components in the Muscle of Rana chensinensis
The nutritional component in the muscle of male and female Rana chensinensis Weiet Chen(Rana chensinensis) was investigated,and the nutritional quality of the Rana chensinensis was analyzed and evaluated.The results showed that the content of moisture,crude ash,crude protein and ether extract in fresh muscle of male and female Rana chensinensis were 79.2% and 76.6%,1.10% and 1.10%,18.7% and 18.1%,0.30% and 0.60% respectively.There were no significant variations between the above data for the male and female Rana chensinensis(P0.05).Seventeen kinds of amino acids were found in the muscle of Rana chensinensis including 7 kinds of essential amino acids.In dry sample,the total content of amino acids(TAA)of male and female Rana chensinensis were 88.71% and 88.79%,and the contents of essential amino acids(EAA)were 30.27% and 30.83% respectively.Four kinds of delicious amino acids of male and female Rana chensinensis were measured 30.27% and 30.84% in dry sample.There also were no differences in essential amino acids(EAA),total amino acids(TAA)and four kinds of delicious amino acids(DAA)of male and female Rana chensinensis. The essential amino acids index(EAAI)of the male Rana chensinensis(87.10)was higher than that of the female(86.04),and theirs were also exceeded those of the common aquatic animals.According to the amino acids score(AAS),Val and Thr become the first and second respectively restrictive amino acids,while(Met+Cys) and Val respectively in chemical score(CS).The study showed that Rana chensinensis was a kind of health protection which delicious and full of nutriments for human.
