[目的]确定甘肃民勤地区'赤霞珠'品系酿酒葡萄的成熟度指标体系。[方法]以甘肃民勤地区主栽的5个酿酒葡萄为研究对象,从9月9日(花后80 d)开始,每隔3 d采集一次葡萄样品,共采集6次,对葡萄果实的基本理化指标、多酚指标和糖酸组分的变化进行测定并分析。[结果]随着果实的不断成熟,总糖、可溶性固形物、pH值逐渐增加,总酸的含量呈逐渐下降的趋势;果实的百粒质量逐渐增加,达到最高值后略有下降的趋势;浆果中糖组分的变化规律与总糖以及可溶性固形物含量的变化趋势相同,呈上升的趋势;根据不同采收期果实的基本理化指标、多酚指标和糖酸组分的变化,基于主成分分析对果实品质进行综合得分评价,结果表明:'赤霞珠'品系在最后一个采收期(即花后 100 d)的品质得分最高,进一步建立了甘肃民勤地区'赤霞珠'葡萄成熟度指标体系,'赤霞珠'品系的一级指标均是糖酸比,最佳取值范围分别为:赤霞珠 15(26。26~28。05)、赤霞珠169(27。03~28。53)、赤霞珠170(26。89~27。26)、赤霞珠VCR11(25。34~27。43)、赤霞珠VCR19 为花色苷,最佳取值范围为(8。84~10。59 mg·g-1)。二级指标以总酚和单宁为主,三级指标多为维生素C。[结论]甘肃民勤地区'赤霞珠'葡萄最佳采收期为花后 100 d,通过计算指标权重,建立了以糖酸为主、多酚为辅的 3 级成熟度指标体系,一级指标为糖酸比,二级指标以总酚和单宁为主,三级指标多为维生素C。
The ripening index system of'Cabernet Sauvignon'grapes in Minqin area of Gansu province
[Objective]To determine the ripeness index system of'Cabernet Sauvignon'strain wine grapes in Minqin area of Gansu.[Method]Five wine grapes planted mainly in Minqin area of Gansu province were used as the research objects.Starting from September 9(80 d after flowering),grape samples were collected at 3 d intervals for a total of six times,and changes in basic physicochemical indexes,polyphenol indexes and sugar-acid fractions of the grape berries were determined and analyzed.[Result]With the continuous ripening of the fruit,the total sugar,soluble solids,pH value gradually increased,and the content of total acid showed a gradually decreasing trend;the 100-grain mass of the fruit gradually increased,and reached the highest value with a slight decreasing trend;the pattern of change of the sugar component in the berry was the same as that of the total sugar as well as the soluble solids content,which was on an increasing trend;according to the changes in the basic physicochemical indexes of the fruits in different harvesting periods,polyphenol indexes and the sugar-acid components,a comprehensive score evaluation of fruit quality was carried out based on principal component analysis,and the results showed that:'Cabernet Sauvignon'strain had the highest quality score in the last harvesting period(i.e.,100 d after flowering),and the'Cabernet Sauvignon'grape maturity index system in Minqin area of Gansu province was further established.The index system of grape maturity was further established.The first-level indexes of'Cabernet Sauvignon'lines were all sugar-acid ratios,and the optimal ranges of values were:Cabernet Sauvignon 15(26.26-28.05),Cabernet Sauvignon 169(27.03-28.53),Cabernet Sauvignon 170(26.89-27.26),and Cabernet Sauvignon VCR11(25.34-27.43),and Cabernet Sauvignon VCR19 were anthocyanin,and the optimal range of values was(8.84-10.59 mg·g-1).The secondary indicators were dominated by total phenols and tannins,and tertiary indicators were mostly vitamin C.[Conclusion]The best harvesting period of'Cabernet Sauvignon'grapes in Minqin area of Gansu was 100 d after flowering,and a 3-level maturity index system with sugar-acid-based and polyphenol-supplemented was established by calculating the weights of the indexes,with the first-level indexes being the sugar-acid ratio,the second-level indexes being based on total phenolics and tannins,and most of the third-level indexes being vitamin C.
