Preparation of Bovine Bone Collagen Peptide Wine and Its Protective Effect on Alcoholic Liver Injury in Mice
To investigate the protective effect of bovine bone collagen peptide wine against alcoholic liver injury in mice,the in vitro antioxidant activities of several bioactive peptides were assessed firstly.The bovine bone collagen peptides exhibited significant antioxidant activity and satisfied the basic sensory requirements for the production of peptide wine.Mice were respectively administered with physiological saline,53%ethanol,and bovine bone collagen peptide wine via gavage,and rel-evant biochemical indicators in serum were measured,and liver tissue sections were analyzed.The results indicated that compared to the model group,serum alanine aminotransferase and aspartate aminotransferase activities in the bovine bone collagen peptide wine group were significantly re-duced(P<0.01).Histopathological observations revealed that mice in the bovine bone collagen pep-tide wine group experienced less liver damage than those in the model group.These findings suggest that bovine bone collagen peptide wine provides a protective effect against acute alcoholic liver in-jury in mice.
