Detection of Active Ingredients in Hazelnut Oil from Different Origins and Study on the Antioxidant Activity in Vitro
This study investigates the volatile components,water content,and in vitro antioxidant activity of hazelnut oil.Hazelnuts from different regions were selected for the study.The volatile components and water content of the hazelnut oils were analyzed using headspace solid-phase microextraction combined with gas chromatography-mass spectrometry and low-field nuclear magnetic resonance techniques.Ad-ditionally,the antioxidant capacity of the different hazelnut oils was measured using a spectrophotometric method.The water content of the hazelnuts from various regions was generally below 2%.A total of 37 com-pounds belonging to 7 categories of volatile components were identified in the hazelnut oils from different re-gions.In the in vitro antioxidant tests,the hazelnuts from Dalian exhibited the strongest antioxidant activity.
