The optimum conditions for extracting the natural red pigment from Begonia fimbristipula Hance were:30%(volume percent) ethanol as extractant,temperature 50 ℃,time 3 h and ratio of material to extractant 1 g∶7 mL.The results showed that the pigment had good thermostability and was stable to fructose,glucose,sucrose,starch and metal ions such as Na+,K+,Mg2+,Zn2+ and Ca2+ under pH≤4 but was unstable to Fe3+.The colour of the pigment changed when pH≥5.
