Identification of source components in quick frozen conditioned beef based on fluorescence PCR method
Beef has high nutritional value,so it is eaten by human beings as an important meat source food in daily life.However,in the market,in order to make huge profits,some unscrupulous traders add other low-priced meat to beef,which is shoddy and seriously infringes on the legitimate rights and interests of consumers.Therefore,in order to study the adulter-ation of frozen seasoned beef,this article takes 13 batches of commercially available frozen seasoned beef as the research object.By optimizing the pre-treatment methods of their relevant standards,they are tested for bovine,pig,chicken,duck,and fox components.As a result,all 13 samples were found to contain bovine derived components,with duck derived compo-nents detected in sample 2 and fox derived components detected in sample 4,indicating adulteration behavior in two sam-ples with an adulteration rate of 15.38%.
