Study on the application development of colloidal additives in food
Colloidal food additives are commonly used,which are mostly used for stabilizing,thickening,emulsifying and so-lidifying.This paper introduced basic concept,production process,product quality specification standard and application,sum-marized the research progress of colloidal food additives allowed in GB 2760-2014,compared the differences in production process and quality index of each colloidal food additive and focused on the action mode of colloidal food additives under different functions.The problems existing in current application were also discussed in order to provide research direction for targeted screening of food safety risk monitoring,
