摘要

采用ICP-MS法测定贝贝南瓜中钙、镁、钾、钠、铁、铜、钼等 26 种元素的含量.结果表明,该方法准确性和稳定性良好;铅、镉、汞、砷、铬等元素含量未超过国家限量指标;与《中国居民膳食营养素参考摄入量》比对分析,贝贝南瓜中镁、钾、铜、钼、铬等元素的含量丰富,其中钾含量最为突出,食用价值高.

Abstract

The contents of 26 elements such as Ca,Mg,K,Na,Fe,Cu and Mo in Kabocha Squash were determined by ICP-MS.The result shows that the method is mature,stable and accurate;Pb,Cd,Hg,As,Cr and other elements did not ex-ceed the national limit index;Compared with the"Reference intake of Dietary Nutrients for Chinese residents",Kabocha Squash is rich in Mg、K、Cu、Mu、Cr and other elements,the K content is the most prominent,edible value is high.
