摘要
本文通过分析我国面皮产品质量现状,提出了制定《面皮》行业标准的重要意义,并通过品质试验以及抽样统计等方式对提出的各项指标进行了试验,试验方法包括直接干燥法、酚酞指示剂法等,通过对试验结果的分析、整理和讨论,确定了面皮产品行业标准的技术指标,为面皮生产企业组织生产、质量评价和检验检测提供了理论依据.
Abstract
Based on the analysis of the current quality of Mianpi products in China,this paper puts forward the significance of formulating China's"Mianpi"industry standards,and tests the proposed indicators by means of quality tests and sampling statistics,including direct drying method,phenolphthalein indicator method,etc.Through the analysis,sorting and discussion of the test results,the technical index of Mianpi product industry standard is determined,which provides a theoretical basis for Mianpi production enterprises to organize production,quality evaluation and inspection.
