Analysis of influencing factors of anionic synthetic detergent residue in catering utensils
To investigate the key factors affecting the residues of anionic synthetic detergents on tableware,this paper first simulated two different washing methods.To identify the primary factors influencing detergent residues,an orthogonal test with three factors at three levels was conducted,focusing on tableware material,washing water temperature and detergent brand.The experimental outcomes revealed that the detergent residual levels were lower with the running water washing method compared to the soak washing method.The influencing factors for detergent residue were prioritized as:tableware material>detergent brand>cleaning water temperature.Residue according to tableware material as follows:melamine material residue>ceramic material residue>stainless steel material residue.Static washing can lead to detergent residues due to inade-quate water cleaning and cross-contamination.Melamine tableware,a type of high molecular weight polymer,has a surface film that adsorbs macromolecular substances,thus retaining more residues.Higher concentrations of anionic synthetic deter-gents in some brands of detergent ingredients may result in higher residues,which contributes to increased residues.In order to reduce detergent residue in daily life,we should adopt the way of running water washing,choose stainless steel or ceram-ic tableware,at the same time choose the market reputation better detergent brand to add the right amount according to the instructions.
