莲藕皮多酚的提取及抗氧化性能研究

Extraction of Polyphenol from Lotus rhizome Peel and Its Antioxidant Activities

运用正交试验对莲藕皮中多酚类物质提取工艺条件进行了优化,并通过提取物对油脂过氧化的抑制作用检测其抗氧化性能.结果表明较佳工艺是:按1∶10(g∶mL)料液比加入60%乙醇溶液,于80℃水浴中浸提2.5 h,重复提取2次.在此条件下多酚粗提物得率为2.374%,多酚纯度为52.99%.莲藕皮粗提物对油脂过氧化具有明显抑制作用,延长了油脂贮藏期.
The extraction condition of polyphenol from Lotus rhizome peel was optimized by orthogonal experiment,and the an riodant acitivity was investigated by measuring its inhibitory effect on peroxide value(POV) of oil.The results show that the opti mum conditions area as follows :L.rhizome (1g)extracted with 10 mL of 60% ethanol at 80℃ water bath extract 2.5h,repeated extraction twice.Under this optimum extraction condition,the yield and purity of polyhenols are 2.374% and 52.99% respec tively.The L.rhizome peel extracts possess significant inhibitory effect on POV of oil.Thus,the oil storagge period was extended.
