目的 了解目前花青素基新鲜度指示膜在智能包装中的应用现状,并探讨未来研究方向.方法 综述近年来花青素提取与纯化、复合薄膜制备及新鲜度指示应用的研究进展,并对花青素复合薄膜的制备及应用在不同监测目标物中的应用效果进行分析.结果 基于花青素变色指示的复合薄膜已成为监测食品新鲜度的有效手段.结论 花青素基新鲜度指示标签推向实际应用仍面临着降低成本、提升可靠性和开发配套应用系统等挑战.
Research Progress on Preparation and Intelligent Packaging Application of Anthocyanin-Based Freshness Indicator Film
To understand the current application status of anthocyanidin-based freshness indicator film in intelligent packaging,and discuss the future research direction.The research progress of anthocyanin extraction and purification,preparation of composite films and application of freshness indicator in recent years were reviewed,and the preparation and application of anthocyanin composite films in different monitoring targets were analyzed.Composite film based on anthocyanin color indicator has become an effective means to monitor food freshness.The practical application of anthocyanidin-based freshness indicator labels still faces challenges such as reducing cost,improving reliability and developing supporting application systems.
