稻谷在加工、储藏和流通等环节中可能会因为环境的改变而产生裂纹.稻谷籽粒一旦产生裂纹,便会导致其加工品质下降,同时也会影响稻谷籽粒的理化性质.分析了稻谷裂纹产生的种类和形成机理、裂纹的产生对稻谷籽粒加工品质和理化性质的影响以及裂纹检测方法的研究,为稻谷储运过程中防止加工品质下降、减少稻谷籽粒理化性质的改变、提高稻谷的经济价值提供理论依据和方法参考.
Research Progress on Rice Crack and Its Physical and Chemical Properties
In the process of processing,storage and circulation,rice grains may crack because of the change of en-vironment.Once the rice grains crack,it could lead to the decline of processing quality and also affect the physical and chemical properties of rice grains.In this paper,the types and formation mechanism of rice cracks,the effects of cracks on the processing quality and physical and chemical properties of rice grains,and the detection methods of rice cracks were analyzed,it could provide the theoretical basis and method reference for preventing the decrease of processing quality,reducing the change of physical and chemical properties and increasing the economic value of rice during storage and transportation.
