Optimization of response surface for extracting dietary fiber from sweet potato peels using complex enzymes
In order to eliminate the environmental pollution caused by the initial processing by-products of sweet potatoes and improve the added value of sweet potato products,this paper took sweet potato peels as raw materials and explored the effects of compound enzyme addition,enzymatic hydrolysis time,enzymatic hydrolysis pH,enzymatic hydrolysis temperature,and liquid-to-solid ratio on dietary fiber yield through single factor experiments.The response surface method was used to optimize the process parameters.The results showed that the optimal process parameters were a liquid-to-solid ratio of 1:25(g/mL),a compound enzyme addition rate of 0.5%(fiber enzyme:amylase:pectinase=1:1:1),an enzymatic hydrolysis time of 1.8 hours,an enzymatic hydrolysis pH of 5.5,and an enzymatic hydrolysis temperature of 48℃.Under these op-timal process conditions,the yield of soluble dietary fiber from sweet potato peels was 23.64%,and the yield of insoluble dietary fiber was 39.88%.
