Research Progress on Detection Methods of Heavy Metals in Food
Metal which density is greater than 4.5 g/cm3 called heavy metals. Pb, Cd, As and Hg have serious effects on human health. Heavy metal in organisms is enriched under the amplification effect of food chain instead of being degraded. So detection of heavy metals is an important project, is of great signiifcance to maintain food safety. In this paper, the methods of detect heavy metals in food are discussed.
