Disease Prevention Effect of Dietary Fiber and Its Application in Food Industry
With the improvement of people's living standards,the proportion of high calorie,high protein,and high fat foods in people's daily dietary structure has increased,and the intake of foods rich in dietary fiber is relatively low.This imbalance in dietary structure has led to an increasing number of sub healthy people.In early studies,dietary fiber was identified as a substance with no nutritional value due to its difficulty in digestion and absorption.However,with the deepening of research,researchers have gradually discovered a close relationship between dietary fiber and the prevention of many diseases.This article elaborated the preventive function and possible mechanism of dietary fiber on diabetes,cardiovascular disease,obesity and intestinal disease,and summarized the application of dietary fiber in the food industry,in order to provide some reference for the development and application research of dietary fiber products.
