三色藜麦多糖含量测定及其抗氧化研究

目的:比较红、白、黑3种不同颜色藜麦的多糖含量,同时评价藜麦多糖的体外抗氧化活性.方法:采用超声波辅助提取法提取红、白、黑藜麦的多糖,采用紫外-可见分光光度法测定多糖含量,并对红色、白色和黑色藜麦多糖进行DPPH自由基清除试验.结果:3 种颜色的藜麦多糖含量测定结果为白色藜麦多糖>黑色藜麦多糖>红色藜麦多糖;体外抗氧化活性测定结果为白色藜麦多糖的抗氧化活性最强.结论:本文研究明确了不同颜色藜麦的多糖含量及抗氧化性之间的差异,为藜麦多糖活性成分的提取纯化、生产及市场转化提供了参考.
Determination of Polysaccharide Content and Antioxidative Study of Tricolor Quinoa
Objective:To compare the content of polysaccharide in red,white and black quinoa,and to evaluate the antioxidant activity of quinoa polysaccharide in vitro.Method:The polysaccharide of red,white and black quinoa was extracted by ultrasonic-assisted extraction,and the content of polysaccharide was determined by UV-VIS spectrophotometry.DPPH free radical scavenging tests were conducted on red,white and black quinoa polysaccharides.Result:The results of 3 kinds of quinoa polysaccharide content were white quinoa polysaccharide>black quinoa polysaccharide>red quinoa polysaccharide.The results showed that white quinoa polysaccharide had the strongest antioxidant activity in vitro.Conclusion:In this study,the differences of polysaccharide content and antioxidant activity of quinoa in different colors were identified,which provided a reference for the extraction,purification,production and market transformation of quinoa polysaccharide active components.
