Study on the Risk of Cadmium Based on the Dietary Habits of Mantis Shrimp
In order to study the dietary risk of high cadmium consumption of mantis shrimp,two methods were used to treat mantis shrimp samples with intestinal gland removal and intestinal gland retention,and the total cadmium content was detected to evaluate the effect of intestinal gland on total cadmium content.Then point assessment method was used to assess the risk of maximum cadmium content in mantis shrimp samples.The results showed that the total cadmium content in mantis shrimps with intestinal glands retained was 2.39 times that without intestinal glands,indicating that the mantis shrimps with intestinal glands had a certain dietary safety risk,and it was recommended to eat mantis shrimps without intestinal glands.The maximum total cadmium THQ was 0.62,and the maximum bioavailability cadmium THQ was 0.062 both of which were less than 1,indicating that high cadmium mantis shrimp had no obvious dietary risk.
