Study on Selenium-Containing Compounds in Selenium-Enriched Oyster Mushroom and Cardamine hupingshanensis
Selenium has many physiological functions and is one of the essential trace elements in human body.Selenium cannot be synthesized by the body and must be taken from food.At present,organic selenium has replaced inorganic selenium and become the mainstream selenium supplement choice because of its safety and high efficiency.In this paper,the content of organic selenium in two selenium-rich agricultural products in the market was analyzed,and the category of organic compounds containing selenium and the composition of seleno-amino acids were preliminarily studied.The results showed that the organic selenium content of Cardamine hupingshanensis and selenium-enriched oyster mushroom were(1 607.81±24.66)mg·kg-1 and(240.14±8.96)mg·kg-1,and the proportion of organic selenium was 76.36%±7.81%and 99.93%±0.02%,respectively.The selenium-enriched oyster mushroom contains more selenium polysaccharide and selenium protein than the Cardamine hupingshanensis.The two samples were rich in seleno-amino acids.Selenomethionine and selenocysteine were the main seleno-amino acids of selenium-enriched oyster mushroom and Cardamine hupingshanensis,respectively.
