Application Analysis of Slightly Acidic Electrolyzed Water in Food Sterilization and Preservation
Slightly acidic electrolyzed water(SAEW)is a safe,non-toxic,environmentally friendly,and efficient new type of fungicide,widely used in the sterilization and preservation of fruits,vegetables,meat,and aquatic products.Therefore,this article analyzes the sterilization characteristics and mechanisms of SAEW,summarizes its research progress in food sterilization and preservation,and aims to provide scientific basis for the application of SAEW in the food industry.
