摘要
微酸性电解水(slightly acidic electrolyzed water,SAEW)是一种安全、无毒、环境友好且高效节能的新型杀菌剂,被广泛地应用于水果、蔬菜、肉类和水产品等食品的杀菌保鲜.因此,本文分析了SAEW的杀菌特性和杀菌机制,总结了其在食品杀菌和保鲜方面的研究进展,旨在为SAEW在食品工业中的应用提供科学依据.
Abstract
Slightly acidic electrolyzed water(SAEW)is a safe,non-toxic,environmentally friendly,and efficient new type of fungicide,widely used in the sterilization and preservation of fruits,vegetables,meat,and aquatic products.Therefore,this article analyzes the sterilization characteristics and mechanisms of SAEW,summarizes its research progress in food sterilization and preservation,and aims to provide scientific basis for the application of SAEW in the food industry.
