在白酒生产过程中,曲虫会影响曲药的质量,进而影响到白酒的品质和口感.本文分析了曲虫对包包曲生产过程的危害,提出了通过原辅料控制、生产环境管理、物理防治、化学防治和员工培训等措施对包包曲生产过程中的曲虫进行预防和治理,为酒曲和白酒的品质控制提供参考.
Abstract
In the process of Baijiu production,koji insects can affect the quality of the koji,which in turn affects the quality and taste of Baijiu.This paper analyzes the hazards of koji insects on the production process of Baobaoqu,and proposes the prevention and treatment of koji insects in the production process of Baobaoqu through the control of raw and auxiliary materials,management of the production environment,physical prevention and control,chemical prevention and control,and employee training,which provides a reference to the quality control of koji and Baijiu.
