Abstract
Fucoidan are natural bioactive substances with multiple physiological functions,including immune regulation,anti-tumor,anti-inflammatory,antioxidant,hypoglycemic,and anti obesity effects.These characteristics make fucoidan have broad application prospects in the food industry.This article reviews the physiological functions of fucoidan and its application progress in food,with the aim of bringing positive impacts to the innovation of the food industry and people's healthy lives.
