Investigation and Evaluation of Heavy Metal Content in Locally Produced Century Eggs in Yongchuan District,Chongqing City
Objective:To detect the heavy metal contents of century eggs,analyze the contamination status based on different sample source,and comprehensively evaluate the safety and nutritional value of heavy metal in century eggs from Chongqing Yongchuan district.Method:A total of 200 batches of century eggs were randomly selected from 15 towns and 7 streets of Yongchuan district,and the heavy metal contents of lead,copper and zinc in the samples were detected by inductively coupled plasma mass spectrometry to analyze the differences in the heavy metal contents of the samples according to the attributes of different sources.The safety and nutritional values were evaluated according to the national food safety standards and the Reference Intake of Dietary Nutrients for Chinese Residents(2023).Result:Lead was detected from 11 of 200 samples,and the content value of the detected samples was 0.005±0.012 mg·kg-1,which is in compliance with the requirements of the National Standard for Food Safety for food contaminant limits.The copper content was 1.107±0.265 mg·kg-1,and the zinc content was 13.870±2.779 mg·kg-1,which were in accordance with the requirements of the Reference Intake of Dietary Nutrients for Chinese Residents(2023).The heavy metal contents of the samples from different sources were analyzed and found to be different.Conclusion:The lead,copper and zinc contents of Yongchuan century eggs did not show excessive contamination and have high safety and nutritional value.
