Analysis of Unqualified Results of National Pastry Supervision and Sampling in 2022
Objective:To analyze the unqualified nationwide pastry results of food safety supervision and sampling inspection in China in 2022.Method:Summarize the unqualified pastry results publicized by the State Administration for Market Supervision and Administration,the market supervision and administrations of provinces,autonomous regions and municipalities directly under the central government in 2022,then analyze the unqualified pastry results from the aspects of the sub-categories of pastry,types of unqualified items and unqualified items.Result:There were 879 unqualified batches,933 unqualified items were inspected by pastry supervision in 2022,among which the unqualified batch of pastry was the most.The main unqualified items are microbial pollution(total number of colonies,mold,etc.),substandard quality indicators(peroxide value,acid value,etc.),excessive use of food additives(dehydroacetic acid and sodium salt,the sum of the proportion of the respective dosage in the maximum use of preservatives when mixed,and the residual amount of aluminum,etc.Conclusion:The microorganism,quality index and food additives of pastry are still prominent.It is suggested that enterprises adopt hazard analysis and critical control point system,food safety management system and other system management methods to comprehensively improve the management ability of pastry food safety.
