This article analyzes the principles and characteristics of molecular imprinting technology,as well as its application research progress in food preservatives,colorants,sweeteners,acidity regulators,emulsifiers,and antio×idants.It also points out the advantages and disadvantages of molecular imprinting technology in food additive detection,aiming to promote the development and application of molecular imprinting technology.
