摘要

乳化剂作为食品生产过程中常用的一类添加剂,不仅可以改善食品的口感及风味,也能提升食品质量,适当延长食品的货架期.随着消费者对于健康食品需求的增加,市场上对天然、功能化的乳化剂需求随之上升.本文以乳化剂为研究对象,分析了乳化剂的种类及作用机理,总结了乳化剂在面包、蛋糕等食品中的运用,以期为乳化剂在烘焙食品中的应用研究提供一定的参考.

Abstract

As a kind of additive commonly used in food production,emulsifier can not only improve the taste and flavor of food,but also improve the quality of food and prolong the shelf life of food.As consumers'demand for healthy foods increases,the market's demand for natural,functional emulsifiers increases.In this paper,emulsifier was taken as the research object,the types and mechanism of emulsifier were analyzed,and the application of emulsifier in bread,cake and other foods was summarized,in order to provide some reference for the application of emulsifier in baked goods.
