Research on the Application of Emulsifiers in Baked Goods
As a kind of additive commonly used in food production,emulsifier can not only improve the taste and flavor of food,but also improve the quality of food and prolong the shelf life of food.As consumers'demand for healthy foods increases,the market's demand for natural,functional emulsifiers increases.In this paper,emulsifier was taken as the research object,the types and mechanism of emulsifier were analyzed,and the application of emulsifier in bread,cake and other foods was summarized,in order to provide some reference for the application of emulsifier in baked goods.
