本文探讨了高铁冷链快餐食品质量与安全管理的各个方面,包括其独特性、管理流程和保障措施.高铁冷链快餐食品特定的运输和保存条件对食品质量与安全提出了特殊要求,为确保食品质量与安全,餐饮企业应建立完善的质量管理体系及食品安全管理体系,覆盖从产品研发到销售的各个环节,并实施严格的供应商管控、异物控制和售前检查等措施,保障高铁冷链快餐食品的质量与安全,为乘客提供优质的餐饮服务.

Abstract

Various aspects of the quality and safety management of high-speed rail cold chain fast food,including its uniqueness,management processes,and guarantee measures,was explored in this article.The specific transportation and storage conditions of high-speed rail cold chain fast food put forward special requirements for food quality and safety.To ensure food quality and safety,catering enterprises should establish a comprehensive quality management system and food safety management system,covering all aspects from product development to sales,and implement strict supplier control,foreign object control,and pre-sales inspections to ensure the quality and safety of high-speed rail cold chain fast food,and to provide high-quality catering services for passengers.
