摘要
目的:对郑州市市售食品重金属含量进行检测分析,以了解食品重金属污染情况,为食品安全监管提供依据.方法:2023年在郑州市共抽取各类食品300份,对铅(Pb)、镉(Cd)、汞(Hg)、砷(As)、铝(Al)5种重金属进行检测.结果:食品中Pb、Cd、Hg、As、Al的检出率分别为56.39%(128/227)、74.43%(131/176)、5.76%(8/139)、62.42%(93/149)、76.29%(74/97),合格率分别为 97.8%、98.3%、100.0%、98.0%、97.9%.重金属超标项目主要为干制水产品和蔬菜干制品中的Pb、根茎类和薯芋类蔬菜中的Cd、大米中的As以及非发酵性豆制品中的Al.结论:郑州市各类食品质量安全状况总体良好,部分干制品、蔬菜、豆制品和大米中存在重金属污染现象,仍需加大监管力度,避免重金属污染食品流向市场,加强食品安全保障.
Abstract
Objective:To detect and analyze of heavy metal content in commercially available food in Zhengzhou,in order to understand the situation of heavy metal pollution in food and provide a basis for food safety supervision.Method:In 2023,a total of 300 samples of various types of food were extracted in Zhengzhou in order to detect the content of five heavy metals,namely lead,cadmium,mercury,arsenic,and aluminum.Result:The detection rates of Pb,Cd,Hg,As,and Al in food were 56.39%(128/227),74.43%(131/176),5.76%(8/139),62.42%(93/149),and 76.29%(74/97),respectively.The qualification rates were 97.8%,98.3%,100.0%,98.0%,and 97.9%,respectively.The heavy metal exceeding standards mainly include Pb in dried aquatic products and vegetable dried products,Cd in root and tuber vegetables,As in rice,and Al in non fermented bean products.Conclusion:The overall quality and safety status of various types of food in Zhengzhou city is good,some dried products,vegetables,soy products and rice are contaminated with heavy metals,and more supervision is needed,avoid the flow of food contaminated by heavy metals to the market,strengthen food safety.
