摘要

用Lineweaver-Burk双倒数法研究姜酚对α-淀粉酶和α-葡萄糖苷酶的动力学抑制类型.结果表明,姜酚对α-淀粉酶和α-葡萄糖苷酶均有明显的抑制效果,抑制类型分别为竞争型抑制和混合型抑制,其抑制常数Kic1、Kic2 分别为 3.88 和 2.67.与α-淀粉酶相比,姜酚与α-葡萄糖苷酶结合的亲和力更好.

Abstract

The Lineweaver-Burk double reciprocal method was used to study the kinetic inhibition type of gingerol on α-amylase and α-glucosidase,and its interaction force was analyzed through thermodynamic parameters.The results showed that gingerol had obvious inhibitory effects on α-amylase and α-glucosidase.The inhibition types were competitive inhibition and mixed inhibition,respectively.The inhibition constants Kic1 and Kic2 were 3.88 and 2.67,respectively.Compared with α-amylase,the binding affinity of gingerol to α-glucosidase was better.
