Analysis of Microbial Detection Methods for the Technological Parameters of Daqu Brewing
Daqu brewing is one of the key technologies in the production of traditional Chinese Baijiu.The formation of its quality and flavor is closely related to the types and activities of microorganisms in Daqu.Therefore,accurate and efficient detection of microbial parameters in the process of Daqu brewing is of great significance for guiding Baijiu production and ensuring product quality.This study discussed the influence of Daqu brewing technology parameters on the structure and function of microbial community,and proposed a set of efficient microbial detection methods,aiming to provide scientific basis for optimizing Daqu brewing technology and improving the quality of Baijiu.
