脉冲电场(PEF)技术能有效解决食品中的生物危害,是一种具有良好发展前景的食品非保温保鲜方法.因此,本文分析了PEF的技术原理以及其在食品保鲜中的应用,以供参考.
Abstract
Pulse electric field(PEF)technologycan effectively solve the biological hazards in food and is a promising non thermal preservation method for food.Therefore,this article analyzes the technical principle of PEF and its application in food preservation for reference.
