摘要

本文以异麦芽酮糖醇为主要原料、以无糖求斯糖果作为芯料、以异麦芽酮糖醇作为包衣材料,采取无糖包衣工艺,制作出异麦芽酮糖醇无糖包衣求斯糖.在此基础上,本文阐述了异麦芽酮糖醇的特性,分析了影响无糖包衣求斯糖结构稳定的因素,以及相关工艺要点,旨在探索异麦芽酮糖醇无糖包衣求斯糖生产的可操作性.

Abstract

In this paper,isomaltitol is used as the main raw material,sugar-free chews candy as the core material,isomaltitol is used as the coating material,to take the sugar-free coating process,to produce isomaltitol sugar-free coating chews candy.On this basis,this paper describes the characteristics of isomaltitol,analyzes the factors affecting the structural stability of sugar-free coated chews candy,as well as the relevant process points,aimed at exploring the operability of isomaltitol sugar-free coated chews candy production.
