Analysis on the Breeding of Mucor Fermented Bean Curd and its Enzyme Production Conditions
This paper analyzed the breeding of Mucor fermented bean curd species and the conditions of enzyme production,and proposed measures to improve the breeding of Mucor fermented bean curd species and the quality of enzyme production,in order to provide scientific and technical support for fermented bean curd industry and promote the industrial development of traditional fermented bean curd.
