从专利申请的角度,对国内脂肪替代物在食品领域的专利申请趋势进行综述,重点分析了中国食品领域脂肪替代物专利申请的申请人分布、主要申请人的技术发展、应用方向等,对脂肪替代物在食品加工中存在的问题和面临的挑战进行总结,为中国脂肪替代物在食品领域的发展提供参考.
Abstract
From the perspective of patent application,analyzes the trend of patent application in fat substitute in the food industry in China,and mainly analyzes the applicants,the technological development of major applicants,direction of application,etc.Summarizes problems and challenges faced by fat substitute in food processing,and provides a reference for the development of fat substitute in the food industry in China.
