Determination of Ascorbic Acid 2-Glucoside in Food by High Performance Liquid Chromatography
A method for the determination of ascorbic acid 2-glucoside,a derivative of vitamin C,in food by high performance liquid chromatography was established.The samples were ultrasonically extracted with metaphosphoric acid,separated on a Zorbax SB-C18(4.6 mm×250 mm,5 μm)column and detected by high performance liquid chromatography with ultraviolet detector.Qualitative analysis was based on retention time and quantitative analysis was based on external standard method.The results showed that the linear relationship of the method was good,the linear correlation coefficient was 1.000,the precision of the method was 0.032%(n=6),the repeatability was 0.023%(n=6),the recovery rate was 97.2%~98.6%,and the relative standard deviation was≤2.13%(n=6).The method is simple in pretreatment,high in recovery,good in reproducibility and suitable for the determination of ascorbic acid 2-glucoside in food.
