Study on the Stress Resistance of Probiotic Microencapsulation
To study the growth and survival of microencapsulated probiotics under different stress conditions,unmicroencapsulated probiotics were used as control.It was verified that the microencapsulation technology was helpful to maintain the vitality and enhance the stability of probiotics.The long-term storage survival rates of microencapsulated Lactiplantibacillus plantarum and Bifidobacterium longum were 79.02%and 70.73%higher than unmicroencapsulated,with significant differences(P<0.05).With the increase of high temperature treatment time,the survival rates of Lactiplantibacillus plantarum and Bifidobacterium longum microencapsulated were 32.14%and 40.36%.Under the condition of fixed humidity of 65%,with the increase of storage time,the survival rate of microencapsulated Lactiplantibacillus plantarum and Bifidobacterium longum was 14.29%and 10.54%respectively under the fixed humidity of 65%.After 120 minutes of treatment in simulated gastric juice,the survival rates of microencapsulated Lactobacillus plantarum and Bifidobacterium longum increased by 59.22 percentage points(P<0.05)and 64.24 percentage points(P<0.05)respectively compared to the bacterial powder group.After 120 minutes of treatment in simulated intestinal fluid,the survival rates of microencapsulated Lactobacillus plantarum and Bifidobacterium longum increased by 34.80 percentage points and 33.82 percentage points respectively compared to the bacterial powder group(P<0.05).Therefore,the microencapsulation technology can improve the viability of probiotics in harsh environment and enhance the stress resistance of probiotics.
