气相色谱技术在粮油食品质量检测中的应用

针对当前粮油食品安全面临添加剂滥用、农药残留、有害化学物质污染等问题,本文以市面上流通的 5 种知名品牌食用油为例,采用气相色谱技术对其进行全面的质量检测分析.结果显示,采用气相色谱技术成功鉴别出 2 种抗氧化剂、2 种防腐剂,为食品添加剂的监管提供了科学依据;采用气相色谱技术有效识别了多种有害农药,确保了粮油产品的食用安全性;气相色谱技术成功区分并量化了各种脂肪酸组成,为评估油脂品质和营养价值提供了科学依据.
Application of Gas Chromatography Technology in the Quality Detection of Grain and Oil Food
In view of the problems of additive abuse,pesticide residue and harmful chemical pollution in grain and oil food safety at present,this paper takes five well-known brands of edible oils circulating in the market as examples,and carries out comprehensive quality detection and analysis by gas chromatography technology.The results show that two kinds of antioxidants and two kinds of preservatives are successfully identified by gas chromatography technology,which provided a scientific basis for the supervision of food addition.A variety of harmful pesticides are effectively identified by gas chromatography technology,to ensures the edible safety of grain and oil products.Gas chromatography has successfully distinguished and quantified the composition of various fatty acids,which provides a scientific basis for evaluating the quality and nutritional value of oils and fats.
