摘要
相较于动物蛋白,植物蛋白具有营养丰富、食品安全、适应性强和环保可持续性等优势,因而受到越来越多的关注和认可.本文综述了植物蛋白的来源、优势特点和应用现状,列出了现阶段我国植物蛋白食品存在的风险和发展面临的挑战,并展望了我国植物蛋白市场的发展前景及发展方向.
Abstract
Compared with animal protein,plant protein has the advantages of rich nutrition,food safety,strong adaptability and environmental sustainability,so it has received more and more attention and recognition.This paper reviewed the sources,advantages,characteristics and application status of plant protein,listed the risks and challenges of plant protein food development in China at the present stage,and prospected the development prospect and direction of plant protein market in China.
