乳酸菌被广泛用于生产各种食品和原料饲料,对发酵产品的风味和质地有特殊贡献.此外,特定的乳酸菌菌株因其对消费者健康的促进作用而被视为益生菌.近年来,随着测序技术的蓬勃发展,对乳酸菌基因组进行测序以全面了解乳酸菌代谢产物的多样性以及预测相关基因的功能,为乳酸菌的挖掘与应用带来了前所未有的机会.本文综述了高通量测序技术在乳酸菌多样性分析、功能基因检测方面的应用,为乳酸菌的功能性开发、代谢产物分析以及应用方向提供了参考.
Research Progress on High-Throughput Sequencing for Analyzing the Diversity of Lactic Acid Bacteria Communities
Lactic acid bacteria are widely used to produce various foods and raw feeds,and have special contributions to the flavor and texture of fermented products.In addition,specific lactic acid bacteria strains are considered probiotics for their health promotion effect on consumers.In recent years,with the vigorous development of sequencing technology,sequencing lactic acid bacteria genomes to comprehensively understand the diversity of lactic acid bacteria metabolites and predict the functions of related genes has brought unprecedented opportunities for the exploration and application of lactic acid bacteria.This article reviews the application of high-throughput sequencing technology in lactic acid bacteria diversity analysis and functional gene detection,providing a reference for functional development of lactic acid bacteria,analysis of metabolites,and application directions.
